INGREDIENTS: 1 aubergine 160g minced pork ½ chilli, shredded 10g spring onion, chopped
SEASONINGS: 2 tbsp Yeo’s Sambal Oeleck
PREPARATION METHOD: - Cut the aubergine into 1/3 depth horizontally and roast for 10 minutes over medium heat until done. Set aside.
- Stir-fry the minced pork with Sambal Oeleck until done. Pour over the aubergine and sprinkle with spring onion and chilli. Then roast for another 3 minutes and serve hot.
